Vegan Fluffy Pancakes
Super easy, fluffy vegan pancakes for baby led weaners 6 months old + and the rest of the family! Parents love them!
Ingredients
- 1 small banana (approx 60 grams of mashed banana)
- 240ml of dairy-free milk (I use oat milk)
- 1tbsp apple cider vinegar
- 1tsp baking powder
- 135g plain flour
- *2tbsp of flaxseed meal (*if you don’t have any just leave flaxseed meal out of recipe, this ingredient is for added nutrition)
- Optional but not needed, add 1tsp vanilla extract
Directions
- Step 1 Mash banana in a big bowl. Add all wet ingredients and whisk with a fork or whisker. Then stir in dry ingredients until you have a pancake mixture.
- Step 2 Heat up a knob of dairy free butter in a large pan on medium heat. Once butter starts to sizzle, spoon out 1 tablespoon of pancake mixture, then continue to spoon out mixture (not touching) 3 or 4 times (depending how large your pan is). Once you start to see bubbles forming on pancake, flip them over (tip: if you find the pancakes are sticking to the pan, add a little more flour into the batter).
- Step 3 Once all pancakes a ready, its time to serve!
- Step 4 How to serve to 6-8 month old: serve 2 long strips of pancake (the size of an adult finger). if baby wants more offer more.
- Step 5 How to serve 8-12 months old: serve pancake cut up into small 2cm pieces, so baby can practice his pincer grip.
- Step 6 How to serve to 12 months + you can offer the whole pancake as it, or cut it up into small cubes or offer as finger sizes. Up to you!
My little girl loves these pancakes and I do, too. Last time I added a date for extra sweetness and it was so delicious! Thanks for this gorgeous recipe!
