No Sugar Apple Pancakes
January 17, 2018: 8-10: 5 min: 8 min: 13 min: EasyPancakes for your babyledweaner and family! These pancakes are fluffy and tasty without the sugar. Using natural flavours, these pancakes are sweet enough to eat plain. Recipe for 6mo+ makes between 8-10 pancakes. These pancakes freeze well. Feel free to use alternative flours or non-dairy options of milk.
Ingredients
- 80 grams plain flour (approx 1/2 cup)
- 80ml full fat milk or dairy-free milk (approx 1/4 cup)
- 1x egg
- 1/2 tsp vanilla extract
- 170 grams of applesauce (How to prep: we made our own apple sauce by placing approx 210g of peeled fresh apple wedges into a pot on a stove top with 2 tbsp of water, simmer on high until apples are so soft you can squash them all with a fork to become a apple sauce. Leave to cool before making pancakes, OR alternatively you can buy canned apples and blend '1 can' 385 grams of granny smith apple slices and measure out 170 grams of applesauce. The rest of the sauce can be stored away in the fridge)
Directions
- Step 1 In a large bowl combine, milk, egg, vanilla extract and applesauce. Then gradually stir the dry ingredients into the wet mixture.
- Step 2 On medium heat stove top, on a greased (buttered) pan, spoon batter mix out, wait until you see bubbles appear on top of pancakes, then immediately flip the pancakes to cook the other side. How to serve for babies 6 months old+ either serve the pancakes into finger sized strips so baby can pick up and hold OR can serve a round small pancake, a bit bigger than the size of a babies fist. Feel free to serve with fruit fingers or spread on top!
Are these able to be frozen ? Thanks!
Sure are ? we freeze them as well. For up to 3months. To defrost, can put in the toaster or microwave
What do you think about using breast milk instead of full fat milk?
Go for it! X
Can we replace the egg with something else?
To replace one egg, the following fruits can be substituted:
1 banana
1/4 cup canned pumpkin or squash
1/4 cup applesauce
1/4 cup puréed prunes
Or
1/4 cup of water or milk
Or
combine 1 Tbsp ground flax seeds with 3 Tbsp warm water and let sit for a few minutes to let thicken before stirring into the recipe.
Xx
Would almond milk work instead of cows milk? Thanks!
Yes sure will ?
Thank you 🙂
?
Could I use coconut milk instead of cow’s milk? X
Yes ?
Hi, I tried these today and they seem very wet when cooked, nearly like cooked apples – 3/4cup of applesauce seems a lot – is that how much you normally use? Thanks Anne
did you weigh the apple, maybe weigh it in grams rather than cups.
Should the apples be peeled before cooking for the sauce?
yes x
Hello! I gave this a try this morning but they didn’t turn out fluffy… Is it supposed to be like that or do you have any tips? 🙂
To make them fluffy make sure you whisk them to make more air bubbles before spooning out onto pan.
Also, if you really wanted to ensure fluffiness add some baking soda.
