Healthy Gingerbread Man Cookies
December 17, 2017: 25-35 cookies: 15 min: 6 min: 21 min: EasyIngredients
- 150 grams wholemeal self raising flour + 50 grams for rolling our and shaping dough
- 1 tbsp of Ginger Ground
- 1/2 tbsp of Cinnamon Ground
- 1 tbsp of vanilla extract (or seeds from 2 full vanilla beans)
- 100g unsalted dairy-free butter (or can use dairy butter)
- 12 seedless dates (prep: in a bowl soak dates in hot water, leave to rest for 5min, drain water then mash with a fork until a paste has formed)
- (Optional ingredient but NOT needed, feel free to add 2 tablespoons of molasses to up the iron content in the recipe)
Directions
- Step 1 Turn on oven to 180 degrees celsius and get out a non-stick baking tray.
- Step 2 In a large bowl hand mix or blend all wet ingredients (date paste, butter and vanilla) until combined. Then add all dry ingredients (flour, spices). Mix until you reach a dough consistency, then create one big dough ball.
- Step 3 On a really floured bench top (add more flour if needed!), roll out cookie dough and shape out all of your gingerbread man, then place on a non-stick baking tray. With a wooden skewer you can push in little eyes and a belly button – just for fun! (We ended up making 30 biscuits as we had a small gingerbread cutter)
- Step 4 Place tray into oven on 180 degrees for only 6 minutes! (check they are golden brown, then remove and transfer to a wired rack to cool down) – enjoy and have a Merry Christmas!
Do you think maple syrup would work in place of molasses? I’ve never seen it over here in France.
I don’t think it would be a direct substitute as far more liquid and a lot sweeter. Maybe try 2/3 amount of maple syrup?

How much date “paste” would 10 dates be? I have date paste to make my life easier but would need to know the amount, thanks!

We made these this morning and we absolutely love them. Frida my three year old helped me make the dough and cut out the shapes and then we eagerly awaited Udo my 8 month old baby to wake up so they could have a biscuit tea party. We ate lots while we were waiting? so soft and gently spiced I much prefer them to the usual gingerbread recipes . Feels so lovely to be able to treat the babies to a festive treat too and know it’s so much healthier. Thank you!!
