Ingredients
- 220 grams mashed pumpkin (approx 1 cup) or pumpkin puree
- 150 grams of dairy-free or dairy milk (we used oat milk)
- 55 grams of butter or margarine (cold butter)
- 80 grams of sultanas
- 335 grams of self-raising flour + 55 grams of self-raising flour to roll out scones
Directions
- Step 1 Preheat the oven to 200°C/400°F/180 fan/gas mark 6 and line a large flat baking tray.
- Step 2 Remove pumpkin skin and cut up approx 240 grams of raw pumpkin into 5cm pieces. Place into a microwave safe bowl, add 2 teaspoons of water, place a flat plate over the bowl sealing the edges of bowl, then place into the microwave for 4 minutes 30 seconds until cooked and soft. Be careful of hot steam when removing the plate. Drain water.
- Step 3 Mash pumpkin with a potato masher, then finish off mashing with the back of a tablespoon, until you have a smooth pumpkin consistency.
- Step 4 In a bowl combine mashed pumpkin, milk and sultanas. Then fold in 335 grams of self-raising flour. Once combined, slowly add in cold butter, try not to over mix, even if there are butter chunks left in the mix thats ok.
- Step 5 Pour out 55 grams of self-raising flour onto a bench work top, gently roll knead out dough with your hands. Using a scone cutter circle, cut out approx 10 scones, approx 7cm thick. Place scones on a lined baking tray and place into oven for 15 minutes. Store in a airtight container in the fridge for up to 5 days or freezer for up to 3 months.
