BLWing Eggy Muffins
These Baby Led Weaning 3-ingredient Eggy muffins are SUPER easy to make, great to eat fresh for 6mo+ bubs and family OR freeze a batch for meals during the week. Easy to pick up for bubs, nice and fluffy to eat, nutritious and great for introducing egg into your bub's diet
Ingredients
- 6x organic free-range eggs
- 3x tablespoons of full fat greek yogurt
- 3x cups of organic fresh or frozen peas, spinach or mixed vegetables
Directions
- Step 1 Turn the oven on 170 degree celsius and greese the muffin tray holes with unsalted butter or coconut oil (tip: using a silicon muffin tin with coconut oil works really well to prevent the muffins from sticking to the pan holes – and worth the investment! If using a tin pan ensure you grease with unsalted butter or coconut oil really well and thick to prevent sticking).
- Step 2 Now add fresh or frozen vegetables into the 9 muffin holes (fill 3/4 of each muffin hole with the vegetables)
- Step 3 Separately, in a jug crack all 6 eggs and yogurt and whisk until all combined. Now pour the egg mixture into each muffin tin hole, fill to the very top of each muffin tin hole. With your finger or spoon gently mix in the ingredients in each muffin hole. Now place the muffin tin tray into the oven for 25 minutes long.
- Step 4 The muffins should be light, fluffy and cooked right through! 🙂 Enjoy! Ava takes these to childcare for breakfast or lunch… Mum and Dad also take these to work – they are delicious! ❄️ These are also great to freeze for up to 3 months. To defrost: place frozen muffins in a container and place into the fridge overnight, then reheat in microwave for 15 seconds
These are simply delicious! I made mini muffins for my LO with frozen broccoli and then some with a veggie melody. I waited until the edge was slightly brown before taking them out. I then let it cool a bit before removing them from the tin and it was so easy. I sent 3 to daycare with my 7mo and he gobbled them right up! The daycare ladies were so impressed with him and the muffins that they asked me to bring some for the adults!

These stuck terribly to the pan! What did I do wrong? Used olive oil spray, maybe that was it?
I use olive oil on anon-stuck cupcake tray or you can use paper cup cake holders lovely x

What alternative could I use instead of the full fat yoghurt ?
Full fat cows milk or could just skip out the dairy (this ingredient) completely x
How long can i keep these in the fridge for? Also how long do they take to defrost?
Fridge – I would say a few days.
Reheat in microwave from frozen. ?

For a 6 month old do you offer the entire muffin whole? Or?
You can do ? or cut it in half. As long as bub can pick it up and wrap his fist around ?? it so he can nibble the top and bottom of it. X
I make these weekly! My daughter is obsessed with them. We use coconut yogurt due to a dairy intolerance and they come out perfect!

Made this as well. LO enjoyed it. Used some spinach, zucchini and carrots. Love , loved the yogurt in it. Gives it such a nice flavor and fluffiness !

If you take them from the fridge do they ha e to be reheated – ie can I take them out in a cool bag for lunch and give them cold?

are you using frozen vegetables? it could be the frozen vegetables that are making them watery. OR if you freeze them and defrost. try fresh vegetables instead. hope this helps. x
Hi there. Will be looking to make these for first time tomorrow. If using fresh veggies, such as carrot or pumpkin, should i look at steaming these first or will they cook to soft consistency in the oven? Thank you for sharing this great recipe!!
They will cook in the oven. No need to pre-cook them.
