Asian Pork Balls with rice noddles

This easy asian inspired meatballs dish are great for baby led weaners and the whole family. Super easy to make and tasty! for baby led weaner 6 months old+ You can serve with rice noodles which are soft on gums and vegetables for everyone. A family meal to enjoy for everyone.
Ingredients
- Meatballs:
- 500g Pork mince
- 1 large carrot (prep: finely grated)
- 3 heap tablespoons of finely grated ginger (which is approx 5cm piece of fresh ginger)
- Serve with:
- 225g Rice vermicelli noodles
- 1 broccoli head
- 8 baby corn
- The Sauce: 4 tablespoons of rice vinegar
- 1 lime
- *Optional to add for Mum and Dad - slices of shallots, cut up chilli, soy sauce
Directions
- Step 1 Preheat oven 200dc. In a large bowl mix pork mince, grated carrot and grated ginger. Roll out your pork balls (approx 5cm balls)
- Step 2 Time to oven steam the pork balls: firstly line a big sheet of foil onto a baking tray and lay out all your pork balls into the middle section longways onto the foil. Fold the foil up longways, then tightly squeeze the ends of the foil together and up (see pics below). It is important to make sure all the balls are secure with no gaps in the foil to ensure the meatballs steam. Cook in the oven for 18 minutes until cooked through.
- Step 3 Whilst the pork balls are cooking, boil enough water on a stove top to cook your rice noodles. In a separate pot boil the broccoli and corn until tender.
- Step 4 To serve: in a big bowl mix the rice noodles, broccoli, corn together and stir through rice vinegar and a big squeeze of lime (serve warm or as a cold dish). Serve with meatballs on the side or on top. For baby led weaner’s 6 months old + serve 1 to 2 pork balls, some noddles, broccoli and corn.
