Spinach & Tomato Pinwheels (3 ingredients)
These super easy Spinach and tomato pinwheels (3 ingredients) are great for baby led weaning! Babies that are showing all readiness signs to start baby led weaning can start having family finger foods and meals around 6 months old. These pinwheels are not only perfect for babies 6 months old+ they are great for the whole family! They make a great on the go lunch box snack. This recipe is also vegan friendly. Feel free to add nutritional yeast over the passata for added nutrition. .
Ingredients
- 1 sheet of puff pastry (320 grams)
- 4 or 5 heaps tablespoons of tomato puree / passata
- 2 big handfuls of fresh spinach leaves
Directions
- Step 1 Preheat the oven to 200°C/400°F/180 fan/gas mark 6 and line a large flat baking tray.
- Step 2 Roll out pastry into a rectangle and spread the passata all over the pastry leaving a 1-2cm gap around the edges.
- Step 3 Roughly lay out all the spinach leaves on top of the passata covering all areas.
- Step 4 Starting from the long side bottom, roll up the pastry carefully until you have one long patty roll, then pinch the end of the pastry to create a seal.
- Step 5 Cut each pinwheel (approx 3cm thick) and lay them all facing up on a tray.
- Step 6 Place into the oven for approx 10-15minutes on 200 degrees celcius (you may need to leave a little longer if pinwheels are thick, but be sure they don’t burn).
- Step 7 Leave to cool on a wired rack before serving. Refrigerate up to 3 days in a airtight container. Freezer friendly for up to 3 months.
- Step 8 How to serve to a 6-9 months old+ either serve half a pinwheel or cut into finger size sticks so baby can pick it up with its fist. For 9 month old+ either serve the pinwheel whole or in bite size small cubes so baby can practise its pincer grip.
